ContentAnse Trabaud is located in the town of Sainte-Anne. It is famous for its magnificent beach and for its hike during which one can discover fields of melons (Cantaloupe). The type of soil in this area allows to give a good yield of melon production. There are many, many recipes with coconut. Our jam is linked to the magnificent Rocher du Diamant. I remember my grandmother's recipe for coconut, coconut sugar and coconut rock cupcakes. I was inspired by the techniques of my mother and my grandmother."The tombolo is a word of Italian origin which designates a tongue of sand which connects two land areas across the water; an island and the coast for example. The sandy causeway which forms a link of more than 200 meters between Petite-Anse, Sainte-Marie beach and the Sainte-Marie islet just opposite is the consequence of the climatic influence of the Bermuda high pressure here. " Moreover, the town of Sainte-Marie is known for its Banana Museum. "To find out everything about bananas, from planting to consumption, the Banana Museum welcomes you for a fun and educational journey through the heart of a busy home. "La Régale is a neighborhood in the municipality of Rivière-Pilote where I spent a good part of my life with my paternal grandmother. This great lady transmitted to me so many beautiful values, magical moments between cultures, breeding, medicinal plants, stories, tales and our moments of domino games !! In his large field there are different fruit trees several varieties of orange, lemon and tangerine. Clementine reminds me of my grandmother and the discussions I had with her while we were eating this fruit. Did you know that we eat a lot of Mandarins on New Years? We collect the skin to prepare the "schrub" (alcoholic drink for Christmas) but the seeds are collected to put in our wallets to attract abundance.A thought for my friend Paco who calls me RDS which means Rayon De Soleil. Pineapple-Coconut jam is a ray of sunshine in your dishes!La Lamentinoise is the name of the inhabitants of the town of Lamentin. When I think of the sweet potato I see the fruit and vegetable vendors again. My childhood with my little basket, my dialogues with the merchants, the fishmonger, the butcher at the Lamentin market. The color of the sweet potato which reminds me of the clay soil of the town.
