Content | Looking at the Des Gorges de la Falaise waterfall, I think about the sensory journey of my ginger jam. It all starts gently, the jam winds its way through your taste buds like the course of a river.
Then there is a change in current, a gentle heat begins to invade your mouth and suddenly it's the fall! The heat is stronger in your throat, a spicy torrent overwhelms you! This is the effect of the Gorges de la Falaise! | I created Planter Style Jam using the same process my mom uses to create Planter Punch (alcoholic drink) at Man Cicine. In the family business it all starts with fruit, so I was inspired by the family recipe to create this jam. | La Lamentinoise is the name of the inhabitants of the town of Lamentin. When I think of the sweet potato I see the fruit and vegetable vendors again. My childhood with my little basket, my dialogues with the merchants, the fishmonger, the butcher at the Lamentin market. The color of the sweet potato which reminds me of the clay soil of the town. | A thought for my friend Paco who calls me RDS which means Rayon De Soleil.
